What kind of games allow you to control profit taking?

One challenge with many quick mobile games is that you often don't have much control over when to lock in your winnings. It often feels like you're just along for the ride until the round ends, win or lose. I'm keen to find games where I can actively decide to take my profit at any point during a round, rather than waiting for an arbitrary end.
